  Bean Dip

1 can black beans or other beans

1 / 2 small onion, chopped
1 Tbsp jalapenos, chopped
1 / 4 cup salsa

2 cloves garlic, minced

1 / 4 cup shredded cheddar cheese, reduced fat
Pepper to taste
Place beans in a blender and puree until smooth. Saute onions, jalapenos, and garlic until onions are slightly tender. Add black beans, salsa, and pepper. Cook mixture for about 5 minutes over medium heat. Add cheese and stir until cheese is melted. Pour mixture into a serving dish and top with a small amount of cheese. Serve with low fat tortilla chips.
 
 
 
 Cucumber Dip
 
5 cucumbers - shredded
1 / 2 c. rice vinegar
1 / 2 tsp. garlic salt

Soak 8 hours - drain well. Pat dry with paper towels

2 pkg. cream cheese
1 / 2 c. mayonnaise
1/ 2 tsp. garlic

Mix till smooth. Add cucumbers. Chill for an hour. 
Serve with crackers or pita chips. Cool and refreshing on a hot day.
